I was asked by one of my followers on Twitter to please rather make my recipes easier by using cups and spoons as measuring units. I explained to her that most qualified chefs will prefer to use weight rather than volume to create recipes. The reason is with weighted recipes you have 100% accuracy, when cooking in bulk like chefs often do, accuracy is key. Your customers come back to your restaurant to taste the same product they had the last time. 90% of the recipes I have and swear by are all weighted and scaled.
However, as a compromise I’ve agreed to post this, a few tables to help those who don’t have a scale near by. Please be careful as a cup of water weighs more than a cup of flour for example. These tables should cover as many variables as possible though.
