My Three Ships Braai sauce: Recipe

ImageImageI always try as much as possible to avoid buying ready made things. Besides them being loaded with preservatives and other chemicals to make them last on the shelf there’s nothing that beats that ego boost when you tell someone “I made this from scratch”. The reason I mention ego is because this recipe is for a BBQ sauce. Its made with a bit of Three Ships whisky. It makes for that sticky, all over your face, ribs style kind of BBQ sauce Americans love. It’s perfect for cheaper cuts of meat that you will be braaiing. Keep basting and brushing the meat (its awesome with chicken, ribs and beef). I’ve made it a few times and trust me, you won’t be buying bottles of sauce ever again. Its also awesome with burgers.

1/2 cup apple cider vinegar
1/2 cup Three Ships whiskey
1 cup Tomato Sauce
1/2 cup water
1/4 cup finely chopped onion
2 tablespoons chopped garlic
2 tablespoons olive oil
2 tablespoons nutmeg
2 tablespoons ground coriander
2 tablespoons English mustard
4 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon paprika
1 tablespoon peri-peri powder
2 teaspoons dried oregano
2 teaspoons dried thyme
1 teaspoon salt
1 teaspoon ground black pepper

– In a pan saute the onions in the oil until slightly browned.
– Add the garlic and saute for a few more seconds before adding the whiskey and simmering. until reduced a little.
– Add the rest of the liquid ingredients (except for the vinegar) including the tomato sauce and Worcestershire sauce. Stir and allow to reduce and thicken a bit.
– Add the sugar and the rest of the spices and dry ingredients.
– Lastly add the vinegar and set the sauce aside to cool.
