Cinnamon and Blueberry muffins

Apparently these are awesome. If you can find them and they’re in season, rather use fresh blueberries. Try the recipe and let me know…

Flour – 240g

Sugar -150g

Baking powder -14g

Eggs -100g

Milk – 240ml

Butter – 60g

Vanilla Extract – 8g

Blueberries (drained if from can) – 120g

Cinnamon – 3g

Nutmeg – 2g

Method:

  1. Sift all dry ingredients together
  2. Stir the liquid ingredients together
  3. Stir liquid ingredients into the dry ingredients making sure NOT TO OVER MIX
  4. Fold in blueberries
  5. Pour into muffin trays and bake at 180 degrees for roughly 18minutes
  6. Turn out of trays and cool on wire rack
